Something to crow about Carrot Cake

Carrot Cake

Ingredients:
3 Cups AP Flour
1 ½ teaspoons Salt
1 ½ teaspoons Baking soda
3 teaspoons ground cinnamon
¾ Cup Coconut Shredded
¾ Cup Chopped Pecans
¾ Cup Raisins
3 Cup Bakers Sugar
1 1/2 Cups Butter (Softened)
6 Whole Large Eggs
4 1/2 Cups peeled and Grated carrots

Combine flour, salt, baking soda, and cinnamon in a bowl and set aside. Combine coconut, walnuts and raisins in a food processor or blender and process until very fine. In a large mixing bowl, combine sugar and oil and mix well. Add eggs, one at a time, beating until creamy. Add dry ingredients and mix until well blended. Add ground nut mixture and grated carrots and beat until blended. Divide batter equally into two 10’ Dutch Ovens preferably aluminum, sprayed with bakers joy and lined with parchment paper. Cook for 40 to 45 minutes or until tooth pick inserted in center comes out clean.

Allow to cool for 10 minutes before removing from dutch ovens and place on cooling rack. When completely cool, frost with icing.

Cream Cheese Icing
3 8oz Pkg Cream Cheese “Soft and room temp”
¾ Cup Soft Butter
7.5 Cup Powder Sugar
3 tsp Vanilla

Combine and beat till smooth, do not over mix or it will become runny!

“Every thing is as it should be.” This saying was used by Dutch oven master and former cooking partner Damon Faust (March 1963 to September 2009) Damon inspired this recipe, and it was on the cooking list for him to compete with at the WCCO in 2010. Damon was David’s cooking partner and the biggest reason David got involved in IDOS and cooking in Dutch ovens.
